The larder

Most of the world's fermented pickles take weeks and a cool room. Some of them are also sold in a jar. This page is the second kind, and every entry on it is a tradition this site also documents, so you can read what the thing is before you buy it.

Why several of these show a search instead of a product

A keyword search for the name of a ferment returns, in roughly this order, a cookbook about it, a seasoning paste for making it, a snack flavoured to taste like it, and then sometimes the thing itself. The build script rejects the first three by rule. Where nothing survived, the block below is a tagged search and says so, which is a worse commercial outcome and a better page.

Kimchi

Cabbage salted to 2.0 to 4.0 percent, then fermented. The FAO bulletin's numbers for it are on the kimchi page.
